- 350 g (12 oz) penne pasta
- 200 g (7 oz) asparagus, trimmed and cut into 2.5 cm (1-inch) pieces
- 150 g (1 cup) fresh or frozen peas
- 150 g (1 cup) green beans, trimmed and cut into 2.5 cm (1-inch) pieces
- 2 tbsp olive oil
- 3 cloves garlic, finely minced
- 60 ml (1/4 cup) vegetable broth
- 120 ml (1/2 cup) heavy cream
- 60 g (2/3 cup) freshly grated Parmesan cheese
- 1/2 tsp freshly ground black pepper
- 1/4 tsp salt (or to taste)
- Zest of 1 lemon
- 1 tbsp fresh lemon juice
- Extra grated Parmesan (for garnish)
- Fresh basil or parsley, chopped (for garnish)
Instructions
- Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil. Add the penne and cook according to package instructions until al dente. Reserve 120 ml (1/2 cup) pasta water, then drain.
- Step 2: Sauté the Garlic
- Meanwhile, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Step 3: Prepare the Vegetables
- Add asparagus, green beans, and peas to the skillet. Sauté for 3–4 minutes until vegetables are just tender but still bright green.
- Step 4: Simmer with Broth
